What’s For Breakie??

My favourite… TACOS!!! So easy too…

I am all about keeping it simple and fast. This can be breakfast, lunch or dinner in my eyes. It covers all the bases for a healthy and fulfilling meal.

Here is what I do…

Ingredients:

Spinach

Mushrooms

Peppers

Onion

Fresh Bacon Bits (store bought from Costco)

2 Eggs (fried over medium for me)

2 Small Corn Tortillas

Sauté your favourite veggies …. I sometimes add Costco bacon bites #lifehack when my veggies are all finished sweating ….fry your eggs (scramble or however you like) and BOOM!!

TIPS:

I’m gluten free so I only use corn tortillas- they are best when you throw them on your frying pan to heat (after your veggies and eggs are done) for a minute! #LifeHack #OnePanWonder

Use your own choice of fillings… cheese if you like (I’m also sensitive to dairy so no cheese for me) … salsa is good to add… my kids love the Red Hot Franks Buffalo- n-Ranch on theirs!
