What to have for Supper?? SOOO BUSY!

Who struggles everyday to know what to cook for their families? Are you rushing in thru the door after work and wondering what you have to throw together for supper before you drag your kids out the door for their activities?? When you look in the fridge and cupboards do you realize all you have are Chicken Nuggets and Fries or a Kraft Dinner and Weiners??

I am a big believer in making meals ahead of time and using the slow cooker!! Here is a fantastic link I saw this morning that I thought I would share with you all about having stress free, yummy, healthy meals for your family!!!

You will not feel the stress of a rushed dinner time… or have no idea what to cook if you take sometime on sunday to put these things together for the week! It makes a huge difference in the flow of your week…

BUT I really NEED IT!!!

How many of you give in to your cravings and make excuse because it the holiday season?? Check out my post…
Food Cravings!!! How many of us fall victim to the nasty need for sugar, salt and fat??

Food cravings are a very normal occurrence I mean really… how many of us go back to the freezer to eat just one more spoon of the Butterscotch Ripple or sneak back in the pantry to have just one more handful of those delicious potato chips?? Its not a big deal to have cravings but giving in to the regularly can lead to weight gain and sabotage all your progress thus far! But “Tis’ The Season” to stuff our face and we are making sweets and going to parties where food and treats are everywhere.

So what do I do about it?? We need to recognize what causes those cravings. Here is a little breakdown:
SUGAR, SALT, and FAT cause a release in a feel good hormone called dopamine. However they also trigger feeling of being hungry when your not really hungry. So having them in your house and at easy reach creates these cravings and makes the crazy “junk demon” appear sayingg “Gimme More!!!” Also these types of food leave a little imprint in your mind telling you that they make you feel good which often what happens with emotional eating.

Seeing how its that time of the year where we constantly are at parties and preparing for the festivities of the season we need to know how to fight back. Not get so far off track this season that we are back to the start. Here are a few tricks to help fight the “Beast!”

1. When you begin to feel your mouth water for the cheese dip or the second piece of cheesecake remind yourself that its your brain that is tricking you. Choose healthier snack options like the fruit choices and do not give in to the dopamine urge.
For Example, office staff rooms (where for some reason becomes a buffet for junk) and parties… try sipping herbal tea or a skim latte. Or choose one treat (walk away) and keep it for after this way you won’t be eating it all day you will just have that one treat for the end of the day. Or my fav is sweet mint gum… I chew it all the time and it curbs those urges and keeps my mouth busy.

2. Eat your Regular Meals: Don’t skip meals to justify your splurges because you often overeat then and go bananas with how much and what you choose. Keep your metabolism steady and just control portions at the food table. Choose healthy carbs they are your friend!!

3.If you find yourself sticking to those tricks but still ready to tear open a bag of chips or devour a whole tub of ice cream then you need be sure you choose the healthiest options, enjoy it to the fullest and portion control! Lets face it! Its the holidays and we are going to eat what we want and give in to some cravings.. we just need to maintain control and not lose track of our goals.

4. Keep Active!! No matter what each day try to move for 30-60mins to keep you focused feeling good and on track! Its bona be hard to develop your routine again in you take two weeks off for the holidays and eat like a monster. Keep on Track!

5. Be honest and faithful with your food journal… keep this going thru the holidays… it will help you stay focused.

Whats Holding Us Back???

PROBLEM: Most people are thinking about the things they don’t want. “I don’t want to fail” “i don’t want to gain anymore weight” “I don’t want to feel tired” does this sound like you…
If so, your LIVING WITH FEAR in your lives. This fear is what’s holding you back!! Change your thoughts to FOCUS ON WHAT YOU WANT! Set goals and see yourself reaching them… If you want to change things in your life, change your thoughts!!!!

Plateaus!!!!!

How many people are feeling like they hit a plateau?? are you stuck… weight loss has come to a hault … not getting any farther with your cardio…well its ok!! I know you must be feeling frustrated…you are eating well and working hard but not budging!!!

Here are 10 things that you can do to help BREAKTHROUGH this plateau!

1. Start today with recommitting to your goals… GET FOCUSED!!
2. Drink water like its your job!!
3. Take a look at your food journal.. and repeat a good week .. get the meals back on track!
4. Remind your self how far you have come!!! Look at progress pics… see?? you have come a long way!!
5. Adjust your calorie intake… you may be getting too few or to many!!
6. Start measuring portions- they tend to get larger when we get use to eyeballing them.
7.Eat less salt… less sugar and less refined grained!!
8. Add new exercises into your routine… and up the intensity
9. Add strength training to your routine… it will boost your metabolism!!
10. Just BE HAPPY!!! Less Stress is Best!!!

JUST REMEMBER… Its not just you that feel this way… EVERYBODY gets stuck… Stay Focused and Keep working towards what you want!! Ask yourself “how will I feel in 6 months when I reach my goal?” And then lace up your sneakers… and GET MOVING!!!

Saying Goodbye to Summer!!

As the summer has ended its kind of bitter sweet!!  So many fun moments and memories that were made… yet it went so fast it left me wanting more!!  Its funny because there are times or events that happen in your life that make you take a step back and re-evaluate.  I think summer ending done just that for me! September for us means adjustments.  My husband goes back to work and its back to the grind with kids, focusing on my business,  working towards some big fitness goals of my own, and just juggling life!! 

However, this September was different!! Both my boys experienced milestones this September… My oldest started Kindergarten and my youngest started Preschool!!  And as Nate, my youngest, always says “BOY OH BOY” wasn’t it tough for me which I am sure a lot of mothers out there experienced and can relate to!!    I mean sure I knew it was coming… I knew they had to do this but for about three days I was just emotional over the fact they were growing so fast and already the first part of their little lives has gone by.

Kids grow in stages and as they grow things become not “easier” but more manageable as they become independent.  I like to call the first part of life for the mothers “survival mode” because that’s what we sleep deprived, often malnourished, hormonal mommas that is fueled by coffee are doing… SURVIVING!!!    Now that the boys are starting to become so independent (I mean really Patrick takes the bus… ALONE!?!!) I feel like we should slow down during those crazy times and soak them up more.  As I watched the bus drive by all I could think about is “Lisa you need to slow down…” the boys are gonna be grown and all they will remember is me telling them to “hurry up get your boots on” or “stop carrying on and get dressed” or “eat your lunch we need to get going!!!”

But really where are we going?  Why can’t we slow down and take 5mins to jump in on the pillow fight or crawl in the fort to read a book. Why not pause and listen to the most creative and amazing story that they just are so excited to tell you about?  Instead we are rushing… impatient… angry… is that what I want my kids to remember? or even worse turn out like that?  Wouldn’t it be better if they saw patience, happiness and love??

So… Are we moving too fast.. are we rushing around so much that we are missing opportunities to capture each moment and savor it! ??  I think so, Yes!

Another Life Lesson that I learned by paying attention to my kids!!  They truly are innocent, pure, happy little creatures that really spend their days trying to be HAPPY.  And if we slow down we might just see that by embracing some of our children’s habits its may not be so bad. We definitely well have more moments cherished in our hearts and our children will have so much more joy!!

In honour of our summer… which we spent (SLOWED DOWN) on many road trips, camping trips, sight seeing and spending a lot of great quality time together with friends and family… I present to you:  “Lisa’s Road Trip Cookies” !!! We enjoyed these delicious little snacks many times on our adventures…

Ingredients:

2 Banana’s (mashed)

1 Cup Oatmeal

3/4cup Butter (can use apple sauce instead)

1 egg

3/4cup Splenda (or Stevia)

1/4 cup honey

1tsp Vanilla

1tsp Baking Soda

1/2 Cup Coconut Flakes

1/2 Cup Wheat Germ

1/4cup Flax Seed (ground)

1tbsp Chia Seeds

1 tsp Baking Powder

1/3 Cup Soya Nut Butter (or your fav nut butter)

1/2 Cup Dark Chocolate Chips (or your fav type)

1/2 Cup Pecans

Directions:

1.Preheat Oven to 375 Degrees

2. in a bowl add coconut, baking soda, wheat germ, flax, chia seeds and baking powder… stir  and set aside

3.In a mixing add add egg and beat well

4.  then add splenda, honey, vanilla, nut butter and mashed bananas.  Blend well!

5. add wet and dry ingredients together and stir in chocolate chips and pecans.

6. Drop on a non stick cookie sheet ( I line mine with parchment paper)

7. Bake for 10-15mins or until golden brown

SLOW DOWN AND ENJOY!!

Protein Pancakes!!!

Well for anyone out there that wants a quick protein packed breakfast… Here is a SUPER DELISH idea!!

Protein Pancakes:

1/2 cup cottage cheese ( I use fat free)

1/2 cup oats ( I use large flakes)

1/2 cup egg whites

1. Mix all together… whisk so its mixed really good!

2. heat pan to a med-high heat

3. Spray a little cooking oil before you pour your mixture into the pan.

4. Heat 2-3mins then flip 1-2 mins and it done!!! Makes one pancake.

Tips:

If you want extra protein you can add a scoop of your fav protein powder when you are mixing your ingredients… no matter the flavor.. or add blueberries or bananas!!

– Use a sugar free topping or top with yogurt… so many possibilities!

PANCAKES!!!!

Okay… Pancakes are a big deal at my house! Every Saturday I make pancakes for the boys… I make a huge batch… They freeze so well! Then during the week, because morning are so hectic, I just grab one outta the freezer and pop’em down in the toaster… VOILA!! Healthy breakfast for the FAM JAM… not processed… they are filled with goodness…. and you can make them whatever color or flavour you want!! LOVE PANCAKES!!!

Lisa’s Pancakes:
1 1/4 cup of flour (use whatever you like but I like whole wheat)
3/4 cup Wheat Bran
1 tbsp. Baking Powder
1 tsp. Baking Soda
1/2 cup Splenda
1/4 tsp. Salt
2 Eggs
1/4 cup Apple Sauce
1 tsp. Vanilla
2 cups of Milk

1. Mix all dry ingredients together
2. In separate bowl mix all the wet ingredients together. Whisk to mix it really well!
3. Combine the wet ingredients and the dry ingredients stirring just until mixed. Do not over mix!
4. Heat your pan or griddle up to a med-high heat. I spray my pan with a little cooking spray. cook for 2-3mins and then flip for 1-2 mins. Makes about 12 pancakes.

Tips:

-When cooking… after each set of pancakes I wipe my pan with a damp cloth or even run it under cool water to maintain a med heat. It keeps the pancake from turning too brown…
– I often add blueberries to my batter or whatever fruit you like… bananas… raspberries… dark chocolate!! Sky is the limit!
-I cool my on a cooling rack before freezing. makes them easier to pull apart when you only need one in the morning.

BALANCE!!!!!

OMG!!!  So…. I try very hard to stay BALANCED!! I believe that it is important to have this value in your life because if not, often it results in negative feelings and stress! It is very difficult at times… and this pass little while has been a struggle!!  As a mother of two small kids with two jobs and I have been solo-parenting since February (Hubby should be home by next week… *happy dance*) things can get crazy!!  The thing is we need to realize that “IT’s OKAY!!!” … just KEEP MOVING FORWARD!!

Patrick’s Juicing Experiment… Mom’s Life Lesson!!!

So… Patrick is so funny! He is always trying to come up with new ideas, whether it be a new recipe, a new way to build a castle, new games and stories… he has a big imagination and I try (best I can) to let him explore these ideas and CREATE!!

He started getting this idea about creating his own juice and some day sell the flavours… (i know… he is 4!!) So after about two weeks of him talking about different flavour combinations and how he was gonna save his money and buy a juice maker… I decided to let him EXPLORE his idea!

So under his direction we all began… I told him we could use the Magic Bullet to try out this experiment and see how it works! How eyeopening it was for me to actually sit back and watch these two children be free with their imaginations… actually getting to put their thoughts to action!! They were so excited. They opened the fridge and started rambling different instructions of how this would pair well with this and we need to add some of this… When I looked at the counter he had mangos, strawberries, and raspberries taken out. I was impressed with his ability to think of the flavour combinations! Patrick comes up with so many recipes like his “Raisin French Toast” to his “Carmel Apple Pecan Pie”!!

He put all the ingredients in and I helped with the blending!! He only wanted to put fruit in first because he told me “it has to be natural” and “healthy”… AGAIN I KNOW HE IS 4!!! But when he checked to see if it was blended enough he thought that it was too thick and that it needed some orange juice…. So we blended it up again!!! This time he tasted it, “it needs something” he told me! I asked him what it needed and he hopped off his stool and went to the fridge. To my surprise he said “Coconut Milk!” … Now at this point I am really looking forward to tasting this amazing creation!!

IT WAS AMAZING!!!!!!

This was a moment where I became the student and once again my Little Monsters taught me a few things! One… just relax! and let them be kids!! It could actually be fun. Two… They has great ideas… just listen!

and Three… Let go of so much CONTROL and STRUCTURE!! As parents we get caught up in schedules and perfection and rules… we get so much into routine we forget that kids need FREEDOM to be KIDS! Imagination is the basis of development and for some reason we don’t take the time to let it come to light. It was during this moment that I looked at my kids and their smiles and realized from now on… we need to Listen… Observe… Support… and have Fun more often!!

Here is Patrick’s “EPIC SMOOTHIE” (named by Patrick)

2 Mangos – Peeled and chopped up
1 cup of raspberries
1 cup of Strawberries
1/2 Orange Juice
1/2 Coconut Milk

After they drank there smoothies Patrick had another great idea to make the left over smoothie into popsicles…. Enjoy Everyone!! AND REMEMBER SOMETIMES WE ALL NEED TO LIGHTEN UP!!!

BREAKFAST!!!

I am always looking for quick breakfast…. I make many versions of this and they keep well in the fridge so each morning I can just heat them… put them in a wrap or just as they are!!!

Lisa’s Egg White Muffins:

500g cartoon of Egg Whites

4 – Asparagus Spears (chopped)

1- 1-1/2 cups of water

12 slices of Turkey Bacon (cut in half)

salt and pepper to taste

1. Preheat oven to 400 degrees

2. Use cooking spray to grease your muffin tray (i get 12 egg white muffins)

3. Take chopped asparagus and put in a bowl with water and microwave them for about 2mins or until tender

4. Line your muffin tray with 1 Slice of turkey bacon in each cup… I cut the bacon in half and cross
them over each other to cover the whole cup.

5. Pour 3 tbsp of egg whites in each muffin cup on top of bacon.

6. Portion the asparagus so u put some in each muffin cup on top of egg whites! Salt and Pepper to your taste.

7. Bake in oven for 25-30mins or until done!!

There are many varitaions to this recipe… I sometimes sauté mushrooms… onions and peppers… and use that instead of the asparagus… I sometimes leave the turkey bacon out as well… Make it your own!!! Don’t be afraid to experiment and try different flavour combinations!!!
