Patrick’s Juicing Experiment… Mom’s Life Lesson!!!

So… Patrick is so funny! He is always trying to come up with new ideas, whether it be a new recipe, a new way to build a castle, new games and stories… he has a big imagination and I try (best I can) to let him explore these ideas and CREATE!!

He started getting this idea about creating his own juice and some day sell the flavours… (i know… he is 4!!) So after about two weeks of him talking about different flavour combinations and how he was gonna save his money and buy a juice maker… I decided to let him EXPLORE his idea!

So under his direction we all began… I told him we could use the Magic Bullet to try out this experiment and see how it works! How eyeopening it was for me to actually sit back and watch these two children be free with their imaginations… actually getting to put their thoughts to action!! They were so excited. They opened the fridge and started rambling different instructions of how this would pair well with this and we need to add some of this… When I looked at the counter he had mangos, strawberries, and raspberries taken out. I was impressed with his ability to think of the flavour combinations! Patrick comes up with so many recipes like his “Raisin French Toast” to his “Carmel Apple Pecan Pie”!!

He put all the ingredients in and I helped with the blending!! He only wanted to put fruit in first because he told me “it has to be natural” and “healthy”… AGAIN I KNOW HE IS 4!!! But when he checked to see if it was blended enough he thought that it was too thick and that it needed some orange juice…. So we blended it up again!!! This time he tasted it, “it needs something” he told me! I asked him what it needed and he hopped off his stool and went to the fridge. To my surprise he said “Coconut Milk!” … Now at this point I am really looking forward to tasting this amazing creation!!

IT WAS AMAZING!!!!!!

This was a moment where I became the student and once again my Little Monsters taught me a few things! One… just relax! and let them be kids!! It could actually be fun. Two… They has great ideas… just listen!

and Three… Let go of so much CONTROL and STRUCTURE!! As parents we get caught up in schedules and perfection and rules… we get so much into routine we forget that kids need FREEDOM to be KIDS! Imagination is the basis of development and for some reason we don’t take the time to let it come to light. It was during this moment that I looked at my kids and their smiles and realized from now on… we need to Listen… Observe… Support… and have Fun more often!!

Here is Patrick’s “EPIC SMOOTHIE” (named by Patrick)

2 Mangos – Peeled and chopped up
1 cup of raspberries
1 cup of Strawberries
1/2 Orange Juice
1/2 Coconut Milk

After they drank there smoothies Patrick had another great idea to make the left over smoothie into popsicles…. Enjoy Everyone!! AND REMEMBER SOMETIMES WE ALL NEED TO LIGHTEN UP!!!

BREAKFAST!!!

I am always looking for quick breakfast…. I make many versions of this and they keep well in the fridge so each morning I can just heat them… put them in a wrap or just as they are!!!

Lisa’s Egg White Muffins:

500g cartoon of Egg Whites

4 – Asparagus Spears (chopped)

1- 1-1/2 cups of water

12 slices of Turkey Bacon (cut in half)

salt and pepper to taste

1. Preheat oven to 400 degrees

2. Use cooking spray to grease your muffin tray (i get 12 egg white muffins)

3. Take chopped asparagus and put in a bowl with water and microwave them for about 2mins or until tender

4. Line your muffin tray with 1 Slice of turkey bacon in each cup… I cut the bacon in half and cross
them over each other to cover the whole cup.

5. Pour 3 tbsp of egg whites in each muffin cup on top of bacon.

6. Portion the asparagus so u put some in each muffin cup on top of egg whites! Salt and Pepper to your taste.

7. Bake in oven for 25-30mins or until done!!

There are many varitaions to this recipe… I sometimes sauté mushrooms… onions and peppers… and use that instead of the asparagus… I sometimes leave the turkey bacon out as well… Make it your own!!! Don’t be afraid to experiment and try different flavour combinations!!!

The Gang!!!

So I should introduce the loves of my life seeing how I will be referring to them often.

First there is my husband, Pat. I have known him my whole life… We are from the same community… Went to the same school… And our parents live basically next door. However, We never started dating tell I was 18 and he was 22. But from that moment on we were a match!! We got married in 2006 and have created what I feel is a pretty great life!

My husband works in Welding Inspections, Quality Control/Assessments. Basically what this means for us is we live in Newfoundland, Canada… But he works in Alberta, Canada!! So anywhere from 8-16 weeks at a time he is on the other side of the country. For us this has been working because the kids and I settle into a groove and stay consistent and my husband does the same at his job. And when he is done his “shutdown” he comes home for anywhere between 2-4 months straight!!

My Little Monsters… Patrick, he is 4!!  So kind and thoughtful!!  Such a gentleman! He is a thinker… wants to be an artist (“an artist can be anything I want mom… a painter… a singer… a builder… anything!”) Loves learning and just all around great kid!!  Nathan, he is gonna be 3 in June!! He was born on my birthday!!  So I will have a birthday buddy for life!!!  And boy he is something else!!  He knows what he wants and he is gonna get it!! I think he is gonna be Mr. Sporty… cannot get enough of hockey and soccer… But also very kind and loving!!  I hope they remain so thoughtful and sweet!!  Both kids have been exercising with me since they were conceived.  I ran a marathon while preggers with Nate and they are with me for almost every workout I have ever done since they were born!!!  I love that!  I hope that I inspire them to love health and fitness as much as me… and they are so strong!!  They now take part in my workouts… not just watch!  They are just the greatest workout partners a gal could ask for 🙂

Then there is my Fam Jam!!  My parents have been married for 32 years… I have three brothers!! Yes… I got beat up a lot!! LOL…   We are all close and all played a lot of sports growing up!!  I have an older brother, Mark… he is 31! Then there is me… (soon to be 30)… Then there is George, 24 and my baby brother Sean, just turned 19!!! We all live in the same province… I actually am the  only one that lies away from everyone… bout a four hour drive!!  But we see each other often…  (George is missing from this pic!!)

We have 2 dogs… Baxter and Bailey!!  We adopted them when they were just born… and also have run many miles with me!! I often run with the double stroller and both dogs since the kids were born… but the dogs have been my running partners since 2006 when we first got them!! Very good dogs!  They are from the same litter… and have never been separated!!! Its funny because they are exact opposites…  Bailey runs like a well-oiled machine… whereas Baxter swims like a fish!! Bailey likes social interaction with people whereas Baxter loves other dogs… Bailey is a “pleaser” and learned lots of tricks and loves to make you proud… Baxter is more to himself and likes to relax!!   Bailey is the golden dog… Baxter is the black dog 🙂

Turkey Sausages??? YUMMY!!

So I use Turkey a lot in my meals… Its lean and tasty!!!  Here is I guess a stir-fry?!?  that I eat a lot!!!

Lisa’s Turkey Sausage Stir-fry:

1 Pkg. of Turkey Sausages

1 Med. Onion

1. red pepper

1 orange pepper

1 yellow pepper

1/2 lb. white button mushrooms

2 celery stalks

1/4 cup water

2 tbsp. Olive Oil

1/4 tsp. cayenne pepper (optional)

garlic

salt

pepper

1. Chop all vegetables up before you start!

2.Then cook your sausages…  I don’t use oil to cook the sausages I brown them with their own fat content…  and if I see they are sticking on I pour in 1/4 cup of water… once cooked take them out and chop them up too…

3. Pour in oil… let it heat a minute or so and toss in all veggies…

5. Add you seasoning now!!  If you have other seasonings you like then add them… it’s a flexible recipe!!

4. Once veggies are cooked toss in the chopped sausages and serve!!  You could serve with rice if you like 😉

Lisa’ s Overnight Oats!!

Here is a recipe that I adopted from other recipes… I am not a chef.. dietician or in any thing other than a food lover who likes to create in the kitchen…

Lisa’s Overnight Oats:

1 Cup Large Flake Oats or Steel Cut (that’s what I use)

1 cup Almond Milk

1 cup Organic Blackberry Yogurt

1 tbsp. Ground Flaxseed

1 tbsp. Chia Seeds

1 tsp. Cinnamon

1 tsp. Vanilla

Mix all ingredients in a bowl… Cover and put in fridge… leave at least three hours (I leave it overnight)… in morning its ready to eat!!  You can pop them in microwave to heat up for a minute or so if you like… But can be eaten cold!!

Options as to what you put in your oats are endless… make whatever flavour combinations you want!  Keep in mind though it does get soggy because its absorbing the liquids… so nuts… raisins… bananas etc. are all delish!!!
